One of my major obsessions is mint chocolate flavored things. Junior Mints, Mint Chocolate Chip Ice Cream, Girl Scout Thin Mint Cookies, ehh... pretty much mint everything! So I decided to bake Mint Chocolate Oreo Cupcakes using the New Duncan Hines Frosting Creations. These Frosting Creations are AWESOME. You choose a "Starting Frosting" + a flavor packet to mix together ---> There are 12 flavors including: Bubble Gum, Caramel, Cherry Vanilla, Chocolate Almond, Chocolate Marshmallow, Cinnamon Roll, Cotton Candy, Mint Chocolate, Mocha, Orange Cream, Strawberry Shortcake, and White Chocolate Raspberry... {ahhh I want to try them all}! I decided to go with the Mint Chocolate flavor and it turned out ah-ma-zing. I paired the icing with Betty Crocker's Super Moist Triple Chocolate Fudge Cake mix + a Mint Chocolate Oreo at the base of the cupcake. To top it off I garnished the icing with a little leftover crushed up Oreo crumbs and these babies turned out SO decadent! Below are a few pictures of these amazing cupcakes. Seriously though, If you like Chocolate Mint things you will definitely LOVE these cupcakes!

cupcake & cupcaque

Cupcakes have been something that I've always loved. Something about these tiny/individual cakes bring such happiness and joy to life {well, at least they do for me!}. Cupcakes actually inspired the name of my blog: "cupcaque" ---> which is pronounced "cupcake" {I just made the word look fancier ;) } With all the different kinds of cupcakes out there, its so hard to choose my favorite.. But I would have to say Red Velvet cupcakes are in my top 5! For this years' SuperBowl I made these NY Giants inspired red velvet cupcakes {shown below} with homemade cream cheese frosting... YUM!

A few weeks ago I was out visiting western Pennsylvania and the weather one day was absolutely gorgeous! I couldn't pass up the nice weather so I decided I would take a little walk, explore, take some pictures and even get a little inspiration. I can't even begin to explain how peaceful it was to be surrounded by wide open spaces.  Being there was such a nice change up in scenery. It made me realize two things: One, it is so easy to get "caught up" in our on-going busy lives. Two {more importantly}, it's good to just simply stop once in awhile and take a moment to really enjoy beautiful places like this and the outdoors in general. When was the last time you took time out of your busy life to just go outside and really enjoy the outdoors?

I just discovered the most amazing news the other week... the world's first cupcake automatic teller machine {ATM} has been launched by Sprinkles Cupcakes in Beverly Hills, CA. Its open 24hrs/7days a week and the cupcakes are made every morning and guaranteed fresh when ordered, SAY WHAT?! That is amazing! With flavors such as cinnamon sugar, chocolate marshmallow, mocha, and peanut butter chip... need I say more?! {Nom!} Too bad I live on the other side of the country! P.S. After some research, rumor has it that Sprinkles Cupcakes will be opening another Cupcake ATM in NYC this summer! YAY! That just made my day! :)
